Apple Jacks Panna Cotta

I’ve been doing a lot of reading lately about this whole breakfast meets dessert thing. I decided to experiment by combining one of the best junk cereals with a classic Italian dessert.  A panna cotta is made from flavored, sweetened milk and cream set with gelatin.

2 Servings

2 cups Apple Jacks

1 cup whole milk

2/3 cup heavy cream

¼ cup granulated sugar

½ packet gelatin

Combine milk and cream in a container or a bowl. Add Apple Jacks and stir to moisten the cereal.

Apple Jacks Panna Cotta

Cool, creamy Apple Jacks panna cotta

Allow to steep for at least one hour in the refrigerator. Taste the milk and check if you think it has enough cereal flavor. If it does not, let it steep a little longer.

Strain out the cereal. Eat it or toss it, but save the milk mixture.

In a saucepan, heat the milk mixture just until it starts to boil. Add the sugar and stir to dissolve.

Sprinkle the gelatin over the top of the milk mixture. Let the gelatin soak for five minutes. Stir.

Pour into ramekins or molds. Chill in the refrigerator for at least two hours.

Serve very cold with a sprinkling of crushed Apple Jacks over the top.
