Sweet Potato Kettle Chips with Awesome

Sweet potato kettle chips blue cheese truffle oil fig balsamic vinegar

Warm blue cheese, truffle oil and fig balsamic make these chips something special.

I have to start out by saying this wasn’t my idea. My aunt came up with this. I actually like her better for it.

Ingredients:

Sweet potato kettle chips

Mild blue cheese

Truffle oil

Fig balsamic vinegar (or regular or any other sweet balsamic)

So this is a casual sort of thing. No measuring. Just go for it. Put some chips into an oven safe dish and sprinkle with the blue cheese. Toss the dish in the oven at 350. Leave it in there just long enough to warm the chips and the cheese. You could let the cheese melt, but I like it just warmed up a bit.

Take the dish out of the oven and drizzle on as much vinegar as you think you like. Then drizzle on the truffle oil. At this point, the oil will be hitting the warm chips and this amazing aroma will be crawling into your brain. The earthy, truffle smell literally made me stop in the middle of a sentence.

The sweet potato chips really make this. They offer a sweetness and more complex flavor that stands up against the other ingredients. This is a snack that really hits all the right notes: sweet, salty, sour, rich, funky, crunchy.

Did you know you could buy bagged sweet potato kettle chips? I had no idea until the other day. I don’t really see much of the middle aisles in a grocery store.
